Taco Boats
Ingredients:
1 spaghetti squash
1 lb ground beef
2 bell peppers
1/2 red onion minced
2 cloves minced garlic
Favorite taco seasoning
sea salt
1 tbsp olive oil
1/4 cup sour cream
1 cup shredded Mexican style cheese
1 cubed avocado ( garnish )
2 Tbsps favorite salsa
Directions:
preheat oven to 425ยบ. Halve your spaghetti squash, remove seeds, and brush each half with your olive oil, then lightly season with sea salt and taco seasoning. Set both halves flesh side down on a greased or parchment lined baking sheet and puncture the shell with a fork several times to allow your squash to breath while baking. Place in the oven and bake for 45 minutes.
While squash is baking your can prep your bell peppers, avocado and brown your beef. Remove your squash from the oven, flip and let cool. Reduce oven temp to 350ยบ.
Once cooled, remove flesh and place in a bowl with your, garlic, onion, 2 tsps of taco seasoning, 1/2 tsp sea salt, Sour cream, 1 chopped bell pepper, ground beef, salsa, and toss together until evenly mixed
Replace each empty halve with your filling until both are equally filled, and top with your shredded cheese. Place in the oven and bake for 20 minutes. Remove and garnish with avocado, bell peppers, and dust with taco seasoning. Serve and enjoy!
