Pumpkin Protein Muffins

Ingredients:

  • 1 cup oats

  • 1/4 tsp salt

  • 1/2 tsp baking pwd

  • 2 tsps pumpkin spice

  • 1 cup milk of choice

  • 1 tsp vanilla extract

  • 2 large eggs

  • 1/3 cup greek yogurt

  • 1/3 cup pumpkin puree

  • 3 Tbsps honey

  • chocolate chips for garnish

Directions:

  1. Preheat oven to 350ยบ, beat eggs and spray muffin tin

  2. In a large bowl add oats, salt, baking pwd, pumpkin spice and whisk together

  3. Add wet stuff. Milk, vanilla, beaten eggs, pumpkin, honey and yogurt and whisk until combined. ( mixture will not be very thick ).

  4. Divide batter into muffin tins, fill to the top and bake for 10 minutes. Pull out and garnish with chocolate chips, resume baking for another 15 minutes.
