Dijon Glazed Edamame

Ingredients:

  • 1 Cup edamame beans or more. Just a bunch of edamame beans will do.

  • 1 Tbsp olive oil

  • 1/2 cup soy sauce

  • 2 Tbsps dijon mustard

  • 1/2 tsp red crushed chili or more if you want it extra spicy

  • 1 minced garlic clove

  • 1/4 cup minced red onion

  • 1 tsp black fermented garlic chips from Trader Joes

  • Cracked pepper to taste

Directions:

  1. Fill a medium sauce pan with water and bring to a boil. Add turmeric, cracked pepper, and edamame pods and boil for 5 to 7 minutes. Remove from boiling water and submerge in an ice bath to shock your edamame. Remove from ice bath and pat dry.

  2. Bring a small saucepan to medium high heat and add olive oil, garlic, onion, soy sauce, dijon, pepper, chilis, and bring to a boil and reduce by 1/2

  3. Let cool, pour over your edamame and toss together. Snack to your hearts content, or sprinkle over a salad with some chopped protein and enjoy!
