Mia’s Maple BBQ Salad Dressing

Ingredients:

  • 1 lb chicken breast, pork, shrimp or steak

  • 3 Tbsps olive oil

  • 2 tsps favorite BBQ rub ( I use www.gindos.com Hickory BBQ Rub )

  • 1 Tbsp Carolina style BBQ sauce

  • 1 Tbsp minced red onion

  • 1 tsp maple syrup

  • 1 cap full of apple cider vinegar

  • 1 Tbsp Dijon mustard

Directions:

  1. If using chicken, pork or steak be sure to cube and then season to your liking. ( I like to do this ahead of time and let the meat marinade for 4 to 8 hours. ) All proteins work well grilled, pan seared or baked.

  1. Combine remaining ingredients into a small mixing bowl and mix together thoroughly.

  2. Dress your salad, toss and then add your bbq chopped chicken, pork, shrimp or steak.

  3. Garnish with a light glaze of BBQ sauce, dig in and devour!

Note: when making a salad with a meat protein be sure to cook your meat to the correct internal temperature. Chicken = 160º, pork = 145º, steak = 145º, shrimp = 145º
