Dad’s Veggie Soup
Ingredients:
1 chopped white onion
4 minced carrots
2 minced celery stalks
3 minced garlic cloves
2 chopped turnips
6 minced radishes
32 oz chicken stock
1/2 tsp ground nutmeg
1 tsp ground turmeric
1/4 tsp red crushed chili ( pizza chilis )
2 bay leaves
1 Tbsp clarified butter ( ghee )
Salt & pepper to taste
Directions:
Prep your ingredients and set soup pot over medium high heat. Add your clarified butter, onion, and garlic and simmer for 2 minutes. Or until onion appears translucent.
Add carrots, celery, radishes, and turnips, lightly salt and pepper, then cover and simmer on low heat for 25 minutes.
Add chicken stock, nutmeg, turmeric and red crushed chili. Bring just to a boil, lower heat and simmer for 15 minutes.
Remove from heat, add spinach and cover for 5 minutes. Remove lid, stir together, spoon and serve!
