Dad’s GF Banana Oat Bread
Ingredients:
3 ripe bananas
2 eggs
50 grams ( 1/4 cup ) cashew butter
25 grams ( 2 Tbsps ) coconut oil
65 grams ( 1/3 cup ) brown sugar
1 Tbsp vanilla extract
1 tsp ground cinnamon
1/4 tsp sea salt
200 grams ( 2 cups ) GF oat flour
50 grams ( 1/4 cup ) rolled oats
2 tsps baking powder
Directions:
Heat oven to 350º and grease a loaf pan with either butter or sunflower oil.
Combine oat flour, rolled oats, baking powder, cinnamon. and sea salt in a medium sized mixing bowl.
In a large mixing bowl mash bananas with a fork and add cashew butter, oil, eggs, brown sugar, vanilla, and stir wet ingredients together until well combined ( about 2 minutes ).
Add dry ingredients to wet ingredients and mix until dry ingredients are incorporated nicely ( about 5 minutes ).
Pour batter into prepared loaf pan and bake for 45 minutes or until a toothpick comes out clean after inserted in the center of your loaf.
