Dad’s Candy Cane Sugar Cookies
Ingredients:
1 Cup unsalted butter softened
1 3/4 Cups sugar
1 Cup Sour cream room temp. ( I use the creamiest from www.breakstones.com )
2 large eggs
1 tsp vanilla extract
3 1/2 Cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
8 - 10 candy canes crushed
Directions:
In a large bowl, cream butter and sugar until light and creamy. I use a stand mixer with paddle attachment.
Add sour cream, eggs and vanilla. Beat well, stopping to scrape the bottom and sides of your bowl to incorporate ingredients until smooth.
Add flour, baking soda, baking powder, salt, and beat on low until dry ingredients are combined. ( dough will be soft. Refrigerate up to 4 hours or overnight ).
Preheat oven to 350º, crush your candy canes and place them in a small bowl. portion out your cookies using a Tbsp and roll into a ball using your hand. Now roll only the top half of your dough ball in your crushed candy canes.
Set cookie balls dough side down on your greased cookie sheet or parchment paper.
Bake for 11 - 12 minutes until the center is set and the edges are just turning a light brown color.
Let sit on baking sheet for 5 minutes, then transfer to a cooling rack. Bite, dunk, devour or all of the above and have the best holiday season!
