Dad’s Ube Coconut Oat Loaf

Ingredients:

  1. 2 medium sized Ube yams or purple yams

  2. 2 eggs

  3. 50 grams (1/4 cup ) almond butter

  4. 25 grams ( 2 Tbsps ) coconut oil

  5. 50 grams ( 1/3 cup ) brown sugar

  6. 2 Tbsps vanilla extract

  7. 1 tsp ground cinnamon

  8. 1/4 tsp sea salt

  9. 200 grams oat flour ( 2 cups )

  10. 2 tsps baking powder

Directions:

  • Pre heat oven to 350º and grease loaf pan.

  • Over high heat bring a large pot of water to a boil

  • Add chopped Ube to your boiling water and boil for 15 to 20 minutes or until they are fork tender.

  • Combine oat flour, baking powder, cinnamon, and sea salt in a medium sized mixing bowl.

  • Drain Ube pot and let cool.

  • In a large mixing b owl mash your Ube with a fork and add almond butter, coconut oil, eggs, brown sugar, vanilla, and stir wet ingredients together until well combined ( about 2 minutes ).

  • Add dry ingredients to wet ingredients and mix until dry ingredients are incorporated nicely ( about 5 minutes ).

  • Pour batter into your greased loaf pan and bake for 45 minutes or until a toothpick comes out clean after inserted in the center of your loaf.

Note: You can also roast your Ube if you would rather not boil. Roasting takes about 45 minutes at 350º. The Ube will retain less moisture during the mashing process, You may need to add about a 1/2 cup of milk to your batter to get a better consistency. I roasted mine the first time I attempted this recipe and I definitely recommend boiling, it is shorter and the Ube will be more moist during the mashing process.
