Dad’s Corn Ribs!
Ingredients:
4 ears of corn ( quartered down the middle )
2 tbsps olive oil
1 lime
1/2 cup parmesan cheese
2 Tbsps melted butter
Spice rub ingredients:
2 tsps kosher salt
2 tsps black pepper
1/2 tsp cayenne pepper
2 1/2 tsps smoked paprika
1 1/2 tsps garlic pwd
1 1/2 tsps onion pwd
Directions:
Quarter your corn by cutting your corn down the middle into 4 equal ribs. ( you might find this step easier if you chop your corn in half before quartering ). Also make sure you are working with a sharp knife for this.
In a separate bowl mix all your spice rub ingredients together and set aside.
place all your corn ribs in a large bowl and drizzle your olive oil on top and then add your spice mixture. Toss together until each corn rib is evenly coated.
Fire up your grill around 450º and place your corn ribs kernel side down on your grill.
Grill until lightly charred and ribs begin to curl. ( about15 minutes )
Remove and replace in your large bowl and let cool.
Drizzle melted butter over your corn ribs, squeeze juice of one lime and add 1/2 cup parmesan cheese.
Toss together once again until evenly coated. Plate and garnish with fresh parsley or cilantro, serve and enjoy!
NOTE: you could also make a spicy garlic aioli to pair with these corn ribs. Such a delicious addition, unfortunately I did not have time to make an aioli for my corn ribs but I for sure will next time!
