Dad’s Pan Fried Pork Chops

Ingredients:

  • 2 bone in pork chops

  • sea salt

  • cracked pepper

  • red crushed chili

  • 3 minced garlic cloves

  • 1 minced red onion

  • Fresh thyme

  • 1 lemon

  • 4 Tbsps butter ( 1/2 stick )

  • 1/2 cup dry white wine

  • 1 tbsp flour

  • 4 oz sliced mushrooms

Directions:

  1. Prep your pork chops by evenly seasoning each side with sea salt, pepper, garlic, red onion, a pinch of red crushed chili, and lemon zest. Place in the fridge until ready to cook

  2. Bring your cast iron to high heat on the grill and add your chops, butter, some minced garlic, onion, and a splash of white wine. Sear each side of your chops and cook until you read an internal temperature of 145º

  3. Remove and cover your chops. Add a 1/2 cup of white wine to your pan and scrape up all the goodness on the bottom. Now add your tbsp of flour and stir until your sauce begins to thicken. Now add your mushrooms and cook for a couple minutes. If your sauce is too thin add a bit more flour. If it is too thick add a bit more wine. Enjoy!
