Dad’s Pan Fried Walleye

Ingredients:

  • 1 lb fresh walleye filets

  • sea salt

  • cracked pepper

  • 1 lemon

  • 1 fresh dill sprik

  • 1 fresh thyme sprig

  • 1/2 stick of unsalted butter ( 4 tbsps butter )

  • 2 cloves minced garlic

  • 1/2 minced red onion

  • 1/2 cup dry white wine

Directions:

  1. Season your filets with sea salt, cracked pepper, lemon juice and zest from your lemon, and half of your minced garlic and red onion. Gently lay 4 thinly sliced lemon slices over your filets. Cover and refrigerate until ready to cook.

  2. Bring your cast iron to high heat add your 1/2 stick of butter and remainder of minced garlic and red onion.

  3. Add your walleye filets with lemon and add fresh sprigs of dill, thyme, and 1/4 of your 1/2 cup of wine. Pan fry for 10 to 15 minutes or until fish reaches an internal temperature of 145º F. Be sure to spoon sauce periodically over the top of your fish as you will not be flipping your filets.

  4. After your fish is cooked, remove, cover and deglaze your pan with the remainder of your white wine. Add 4 cups of kale, spinach, or a combination of both and sauté for 5 to 6 minutes or until greens are cooked to desired consistency. Plate with greens, roasted potatoes and enjoy!!
