Dad’s Apple Oat Loaf
I was inspired to create this recipe after experimenting with oat flour banana bread loaves. The fresh ground oat flour in this recipe soaks up the apple, cinnamon and vanilla flavors in the most amazing way. Creating a truly fall time experience that everyone in the whole family will enjoy, and because it is made with oat flour that makes this loaf gluten free and perfect for any family that might have sensitivities to gluten.
INGREDIENTS:
350 grams apple sauce
2 eggs
50 grams ( 1/4 cup ) cashew, sunflower or almond butter
25 grams coconut oil
60 grams brown sugar ( 1/3 cup )
1 tsp vanilla
1 tsp gr. cinnamon
1/4 tsp sea salt
200 grams oat flour ( 2 cups )
2 tsp baking powder
Side note: Peanut butter will also work in this recipe
DIRECTIONS:
Pre heat oven to 350º and grease loaf pan with either clarified butter or oil
If you don’t have oat flour you can grind 2 cups of either rolled or steel cut oats in a blender to make your flour.
In a large mixing bowl combine nut butter, coconut oil, eggs, brown sugar and applesauce and stir together using either a fork or a whisk.
In a separate bowl combing dry ingredients: oat flour, salt, baking powder and cinnamon and whisk together.
Pour dry ingredients in with the wet ingredients and mix together until just combined. Be sure to not over mix the batter. ( about 2 minutes )
Pour batter into your prepared loaf pan and bake for 45 minutes or until a toothpick inserted into the center of your apple lbread comes out clean.
Remove from oven and let apple bread cool in loaf pan for 10 minutes. Then remove from pan and let cool completely before slicing. Serve slices toasted with just a light spread of butter. Enjoy!
