Everything Cheeze Jalapeño Poppers

INGREDIENTS:

  • 1 large eggplant chopped ( or 2 regular sized eggplants )

  • 8 oz chopped mushrooms ( I used porcini I believe )

  • 1 Tbsp olive oil

  • 1/2 tsp sea salt ( heaping 1/2 tsp )

  • Fresh cracked pepper

  • 1 Cup + 1 Tbsp Everything Cheeze

  • 1/4 Cup boiling water

  • 1 lb jalapeno peppers ( sliced in half and deseeded )

DIRECTIONS:

  1. Combine eggplant, mushrooms, olive oil, sea salt, pepper and 1 Tbsp Everything Cheeze in a large bowl or ziplock bag and toss together thoroughly.

  2. Grill or sauté your eggplant and mushrooms over high heat ( about 450º on the grill ) until fork tender ( about 6 to 8 minutes )

  3. Combine 1 cup Everything Cheeze and 1/4 cup boiling water in a medium sized mixing bowl and stir together thoroughly with either a fork or whisk, until ricotta consistency is reached.

  4. stuff your jalapenos with your eggplant and mushroom mix and then place jalapeños on the grill at 450º for about 8 to 10 minutes or until a nice char is reached on the underbelly of the jalapeños. Serve and enjoy!
