Butternut Squash Cream Sauce

Ingredients:

  • 2 cups heavy whipping cream

  • 1 Tbsp olive oil

  • 3 minced garlic cloves

  • 1/4 cup minced red onion

  • 1/4 tsp crushed red pepper flakes

  • 1 tsp black fermented garlic chips ( www.traderjoes.com )

  • 1/2 tsp ground or shaved nutmeg

  • 1/2 cup butternut squash or pumpkin puree

  • 1/3 cup shredded parmesan cheese

  • Salt & pepper to taste

Directions:

  1. In a saucepan add olive oil, garlic and red onion and bring to medium high heat.

  2. Add pepper flakes, fermented garlic, and nutmeg and stir together.

  3. Add your heavy whipping cream and squash puree and stir together until smooth. Now add your cheese and stir together once more.

  4. Bring to a low boil, stir, reduce heat to low and cover. Stirring periodically while pasta boils.

  5. Remove from heat, taste and add a touch more nutmeg, pepper or salt if needed. Pour over your noodle of choice and enjoy!
