Pumpkin Protein Cookies!
Ingredients:
1 Cup whipped cottage cheese
1/2 Cup rolled oats
1 tsp pumpkin pie spice ( or however much you want… I just dump it on there. )
240 grams pumpkin puree ( approximately 1 cup )
1/2 cups almond butter
2 tbsps maple syrup ( or just dump it on there for a while. That’s what I do. )
1/2 cup chocolate chips
2 tsps vanilla extract ( or just dump it on there until your heart says enough. That’s how I measure it. )
1 cup oat flour
1 tsp baking powder
1/4 tsp sea salt ( or a healthy pinch )
Directions:
Preheat oven to 350º
In a medium sized mixing bowl place your 1 cup of cottage cheese and whip together using an immersion blender until you achieve a smooth and creamy texture. ( a food processor or regular stand up blender will also work for this step. )
Combine all ingredients in your large mixing bowl with your bananas and mix together until well incorporated.
On a greased cookie sheet, spoon out cookie dough using a Tbsp and place on your cookie sheet about 2 inches apart. Bake for 20 minutes, remove, and let cool. Enjoy your tasty and healthy breakfast or snack!
