Pumpkin Protein Cookies!

Ingredients:

  • 1 Cup whipped cottage cheese

  • 1/2 Cup rolled oats

  • 1 tsp pumpkin pie spice ( or however much you want… I just dump it on there. )

  • 240 grams pumpkin puree ( approximately 1 cup )

  • 1/2 cups almond butter

  • 2 tbsps maple syrup ( or just dump it on there for a while. That’s what I do. )

  • 1/2 cup chocolate chips

  • 2 tsps vanilla extract ( or just dump it on there until your heart says enough. That’s how I measure it. )

  • 1 cup oat flour

  • 1 tsp baking powder

  • 1/4 tsp sea salt ( or a healthy pinch )

Directions:

  1. Preheat oven to 350º

  2. In a medium sized mixing bowl place your 1 cup of cottage cheese and whip together using an immersion blender until you achieve a smooth and creamy texture. ( a food processor or regular stand up blender will also work for this step. )

  3. Combine all ingredients in your large mixing bowl with your bananas and mix together until well incorporated.

  4. On a greased cookie sheet, spoon out cookie dough using a Tbsp and place on your cookie sheet about 2 inches apart. Bake for 20 minutes, remove, and let cool. Enjoy your tasty and healthy breakfast or snack!
