Dad’s Pumpkin Oat Loaf
Ingredients:
350 grams ( 12 oz ) pumpkin puree
2 eggs
50 grams ( 1/4 cup ) almond or cashew butter
25 grams ( 2 Tbsps ) coconut oil
100 grams ( 1 cup ) brown sugar
1 tsp Vanilla extract
2 tsps ground cinnamon
1 tsp ground nutmeg
1/4 tsp sea salt
250 grams ( 2 cups ) oat flour
2 tsps baking powder
Directions:
Heat oven to 400º F and cut your pie pumpkin in half by slicing from top by the stem down through the middle, and then pull the two halves apart with your hands.
remove all of the seed from your pumpkin, sprinkle lightly with brown sugar and place on a baking sheet with the flesh side facing down.
Puncture some holes on the opposite side with a fork so the pumpkin is able to breath while baking and soften the flesh in a more timely fashion. Place in the oven and bake for 40 minutes.
Lower your oven temp to 350ºF and remove from oven and let your pumpkin cool until close to room temperature. While your pumpkin is cooling you can begin combining your dry ingredients, mixing together your oat flour and baking powder in a medium sized bowl.
Once pumpkins have cooled you can begin spooning out 350 grams ( 12 oz ) of the flesh of the pumpkin and placing it in a large mixing bowl.
Add almond butter, coconut oil, and eggs and mix together until well combined.
Add brown sugar, vanilla, cinnamon, nutmeg and salt and continue mixing until well combined ( about 2 min )
Combine your dry ingredients with your wet ingredients and mix until desired batter consistency has been reached. ( if too wet add some more oat flour, if too dry add some milk )
Pour batter into a greased loaf pan about half way and then add about a 1/2 cup of your cream cheese filling. After you have added your cream cheese filling, finish adding the remainder of your pumpkin batter and then gently smooth with a spatula.
Place in the oven and bake for 45 minutes or until a toothpick inserted into the center of your pumpkin loaf comes out clean.
remove from oven and let pumpkin bread cool in loaf pan until pan is at room temperature. Remove bread from pan and let cool completely before slicing.
