Dad’s Meatballs

Ingredients:

  • 1 lb ground beef

  • 1 tsp sea salt

  • 1 tsp Italian herbs

  • 1/4 cup red wine

  • 3 tsps olive oil

  • 1/4 cup mayo or vegan mayo

  • 1/2 cup bread crumbs soaked in 1 oz of red wine

  • 1/2 tsp cracked black pepper

  • 4 cloves minced garlic ( or much more if that’s your thing )

  • 1/3 cup minced red onion

Directions:

  1. In a small bowl combine bread crumbs and 1 oz of red wine, mix together and set aside.

  2. In a large bowl combine beef, salt, Italian herbs, 1/4 cup red wine, 2 tsps olive oil, mayo or vegan mayo, wine soaked bread crumbs, cracked pepper, garlic, onion and blend everything together using your hands.

  3. Begin rolling into 1/4 or 1/2 in balls and place on plate or large piece of tin foil.

  4. Set a large saucepan over medium high heat and drizzle in a tsp or so of olive oil, dash of sea salt and a pinch of Italian herbs. You can add more garlic and onion to the pan if you have any extra on hand. ( always a good decision )

  5. Add your meatballs and brown on either side cooking for about 10 minutes, pour in a splash of red wine and deglaze your pan and then add your sauce. ( side note: my homemade red sauce recipe is awesome with these meatballs! )

  6. simmer over medium low heat for 15 minutes and serve it up. Hope you all enjoy!
