Dad’s Elote!

INGREDIENTS:

  • 7 ears of fresh corn

  • 1 chopped jalapeno

  • 1 tsp minced garlic & shallot

  • 1/4 cup sour cream

  • 1/4 cup mayonnaise or vegan mayonnaise

  • 1/4 tsp cayenne pepper

  • 1/4 to 1/2 cup grated queso fresco or cojita cheese

  • salt and pepper to taste

  • 1/2 of fresh lime juiced

  • garnish with queso fresco and smoked paprika

DIRECTIONS:

  1. Using a large stock pot, fill with 1 gallon of water and bring to a boil. Submerge ears of corn in water and boil for 8 minutes. Remove corn using a set of tongs and let cool.

  2. Once corn has cooled begin shaving corn off the cob using a cerated knife. Shave corn into a container or a medium sized bowl for serving.

  3. Add chopped jalapeno, garlic, shallot, sour cream, lime juice, mayo or vegan mayo, cayenne pepper, salt, pepper and your grated queso fresco or cojita cheese.

  4. Mix ingredients together thoroughly and taste. If elote needs more salt, pepper or lime juice add more until your elote reaches your desired flavor levels.

  5. garnish with some extra grated cheese and a little smoked paprika and enjoy! You can serve right away or store in the fridge until ready to serve.

NOTE: This recipe does tend to be a bit spicy. If you would like to reduce the heat level feel free to leave the jalapeno out of the mix.
