Dad’s lemon chicken marinade

Ingredients:

  • 1 LB boneless chicken thighs or preferred cut of chicken

  • Perhaps a little more than 1/2 tsp sea salt

  • About a teaspoon of olive oil

  • Cracked pepper

  • 3 minced garlic cloves

  • 1/2 shallot minced

  • 1 oz ( shot glass ) of dry white wine

  • 1 whole lemon juiced and zested

  • 1 tsp honey

  • Maybe 1 Tbsp Italian herbs

Directions:

  1. Combine all ingredients together in a large bowl or ziplock bag and mix together thoroughly.

  2. Cover bowl or seal bag and refrigerate anywhere from 4 to 24 hours. I get my best flavor with an 8+ hour marinade time.

  3. Grill, bake or pan sear until internal temp of chicken reaches 160º. Serve over pasta, salad, risotto or a mediterranean style couscous and enjoy!
