Dad’s lemon chicken marinade
Ingredients:
1 LB boneless chicken thighs or preferred cut of chicken
Perhaps a little more than 1/2 tsp sea salt
About a teaspoon of olive oil
Cracked pepper
3 minced garlic cloves
1/2 shallot minced
1 oz ( shot glass ) of dry white wine
1 whole lemon juiced and zested
1 tsp honey
Maybe 1 Tbsp Italian herbs
Directions:
Combine all ingredients together in a large bowl or ziplock bag and mix together thoroughly.
Cover bowl or seal bag and refrigerate anywhere from 4 to 24 hours. I get my best flavor with an 8+ hour marinade time.
Grill, bake or pan sear until internal temp of chicken reaches 160º. Serve over pasta, salad, risotto or a mediterranean style couscous and enjoy!
