Dad’s Corned Beef

Ingredients:

  • 3 lb Trader Joes brined & uncured brisket

  • 3 carrots coarsely chopped

  • 1 cabbage quartered

  • 1 red onion quartered

  • 1.5 lb baby red potatoes

  • 2 cups beef broth

  • 1 pint of Guinness

  • sea salt

  • olive oil

Directions:

  1. Coarsely chop you carrots and quarter your cabbage and red onion. Place in a ziplock bag, season with a few pinches of sea salt and about a teaspoon of olive oil and shake it up. Repeat this same process with your potatoes in a separate bag.

  2. Place your potatoes in your instapot followed by your brisket and finally add your carrots, onion and cabbage.

  3. Pour in your 2 cups of beef broth and 1 pint of Guinness.

  4. Seal the lid of your instapot and press the pressure cook button and set cook time for 90 minutes.

  5. Remove your finished St. Patty’s day goodness and place on a large platter, slice up your brisket and enjoy!
