Dad’s 2-way Sesame Raspberry Chicken

1st way: Marinade

INGREDIENTS:

  • 1 LB boneless chicken thighs

  • 1 Tbsp sesame bagel seasoning

  • 3 minced garlic cloves

  • 1/2 cup chopped red onion

  • 1 Tbsp olive oil

  • 2 tsps soy sauce

  • 2 Tbsps raspberry jelly

  • Fresh cracked pepper

DIRECTIONS:

  1. Combine all ingredients in a large bowl or ziplock bag and mix together thoroughly and refrigerate for 4 to 24 hours.

  2. Remove from refrigerator and grill, pan sear or bake until internal temperature of chicken reaches 160 degrees.

  3. Garnish with sesame seeds and chopped scallions and enjoy! Serve on a bed or rice, rice noodles or veggies.

Note: try this same recipe with salmon… awesome! If you don’t have a full pound of salmon feel free to reduce seasoning to 2 tsps and the jelly to 1 Tbsp.

2nd way: Crockpot

INGREDIENTS:

  • 1 LB chicken tenders or thighs

  • 1 chopped red onion

  • 3 cloves minced garlic

  • Pinch of sea salt

  • 1 Tbsp olive oil

  • 1 tsp Sesame Bagel Seasoning

  • Fresh cracked pepper

  • 1 Tbsp tahini paste

  • 2 Tbsps raspberry jelly

  • 1 tsp fish sauce

  • 1 Tbsp soy sauce

  • 1 tsp sesame oil

  • 1 Cup water

DIRECTIONS:

  1. Combine all ingredients in your crockpot and set to low setting for 6 to 8 hours or high setting for 4 to 5 hours, shred and enjoy!

  2. Serve on sliced sourdough bread for a delicious sandwich, on a bed of rice, rice noodles or mix with grilled veggies or a large salad.
