Dad’s 2-way Sesame Raspberry Chicken
1st way: Marinade
INGREDIENTS:
1 LB boneless chicken thighs
1 Tbsp sesame bagel seasoning
3 minced garlic cloves
1/2 cup chopped red onion
1 Tbsp olive oil
2 tsps soy sauce
2 Tbsps raspberry jelly
Fresh cracked pepper
DIRECTIONS:
Combine all ingredients in a large bowl or ziplock bag and mix together thoroughly and refrigerate for 4 to 24 hours.
Remove from refrigerator and grill, pan sear or bake until internal temperature of chicken reaches 160 degrees.
Garnish with sesame seeds and chopped scallions and enjoy! Serve on a bed or rice, rice noodles or veggies.
Note: try this same recipe with salmon… awesome! If you don’t have a full pound of salmon feel free to reduce seasoning to 2 tsps and the jelly to 1 Tbsp.
