Sourdough Crusted Chicken Tenders
Marinade Ingredients:
1 lb chicken tenders
1 Tbsp Olive oil
1 tsp kosher salt
1 tsp Italian seasoning
1 tsp smoked paprika
Cracked black pepper
1 tbsp vegan mayonnaise
1 tbsp Dijon Mustard
1 minced garlic clove
1 tbsp minced red onion
Breading Ingredients:
4 cups bread crumbs
2 tsp kosher salt
1 tsp black pepper
1/4 cup parmesan cheese
1 tsp dried parsley
Directions:
Combine all marinade ingredients in a large ziplock bag, shake to combine, seal and refrigerate for a couple hours or overnight.
Preheat oven to 350º, and mix breading mix in another ziplock bag. Pour out on a sheet pan and coat each tender in the breading mixture and place on another sheet pan. Place in the oven and bake for 30 minutes or until chicken registers an internal temperature of 165º.
Note: I make this recipe using stale bread sourdough bread crumbs. I let the ends of my loaves dry out and then I crush them and use them for breading. They are delicious! If you do not have sourdough bread crumbs you can totally use store bought bread crumbs, croutons, basically whatever you want.
