Elote Salad w/ CORSPICE

INGREDIENTS:

  • 5 ears of corn with threads removed

  • 1/4 cup vegan mayonnaise

  • 1/4 cup sour cream

  • 1 Tbsp Corspice A-3 blend

  • 1/2 Cup grated cojita cheese

  • 1 tsp minced garlic & shallot

  • 1 cup quartered cherry tomatoes

  • 1/2 Cup chopped red onion

  • 1 lime juiced

  • Cilantro for garnish

DIRECTIONS:

  1. Pull down husks of corn and remove hairs. Then replace husks and soak corn in cold water for 20 - 30 minutes.

  2. Pat corn dry and set grill between 425º and 450º and grill corn in husks turning a 1/4 turn every 5 minutes until cooked. about 25 - 30 minutes

  3. Remove corn from grill and let cool. Remove husks and shave corn from cob using a cerated knife.

  4. Combine corn and remaining ingredient in a bowl and toss together until corn is evenly coated.

  5. Garnish with chopped cilantro and enjoy as a side, slap some on a burger, taco or just eat it right out of the bowl!
