Elote Salad w/ CORSPICE
INGREDIENTS:
5 ears of corn with threads removed
1/4 cup vegan mayonnaise
1/4 cup sour cream
1 Tbsp Corspice A-3 blend
1/2 Cup grated cojita cheese
1 tsp minced garlic & shallot
1 cup quartered cherry tomatoes
1/2 Cup chopped red onion
1 lime juiced
Cilantro for garnish
DIRECTIONS:
Pull down husks of corn and remove hairs. Then replace husks and soak corn in cold water for 20 - 30 minutes.
Pat corn dry and set grill between 425º and 450º and grill corn in husks turning a 1/4 turn every 5 minutes until cooked. about 25 - 30 minutes
Remove corn from grill and let cool. Remove husks and shave corn from cob using a cerated knife.
Combine corn and remaining ingredient in a bowl and toss together until corn is evenly coated.
Garnish with chopped cilantro and enjoy as a side, slap some on a burger, taco or just eat it right out of the bowl!
