Dad’s Vegan Lump Crab Cakes

Ingredients:

  • 1 lb lions mane mushroom

  • 2/3 cup saltine crackers, crushed

  • 2 tbsps ground flax meal

  • 5 tbsps water

  • 1/4 vegan mayonnaise

  • 2 tbsps dijon mustard

  • 1 tsp Old Bay seasoning ( in my recipe I used Chesapeake Bay from The Spice House )

  • 1 tsp dried parsley

  • 1 tsp soy sauce

  • 2 garlic cloves, minced

  • 1/4 cup minced red onion

Directions:

  1. preheat oven to 450 and begin prepping your ingredients. I like to coarsely chop the lions mane to give it a real lump crab look and feel.

  2. make your flax egg by combining your ground flax and water. Stir together thoroughly and set aside.

  3. combine your remaining ingredients in a large mixing bowl. Add your flax egg to your bowl last giving it plenty of time to form. Combine all your ingredients together.

  4. using a 1/3 cup spoon out your mixture, pack tightly and tap out on a parchment lined making sheet. Bake for 10 minutes or until golden brown and enjoy!
