Dad’s Olive Juice Marinade
Ingredients:
1 lb boneless chicken thighs
2 tsps kosher salt or a heavy pinch
1 tsp cracked pepper
2 tsps smoked paprika or a heavy pinch
1/2 tsp black fermented garlic chips
1 tsp Green Goddess rub ( www.traderjoes.com )
1 oz ( shot glass ) white wine
3 tbsps kalamata olive juice
2 minced garlic cloves
1/4 cup chopped red onion

Directions:
First you are going to combine all of the ingredients in a large bowl or a ziplock bag and mix them thoroughly. Shake it if using a ziplock bag, if you’re using a bowl please don’t shake it... I don’t think you’ll like the results. Mix together with your hands and cover with Saran Wrap or cling wrap and refrigerate for 4 to 8 hours.
When ready to cook feel free to grill, pan sear, bake, whatever you want to do as long as you cook the chicken to an internal temperature of at least 165º. Enjoy!
